This bright and smooth Costa Rican coffee develops really nicely in the roaster. As the energy builds inside the bean, the coffee rounds out and enters first crack with force. Here we find the coffee presents a warm, sweet, and bright cup and the beans have enough energy to coast to the cooling bin without over developing.

A very interesting coffee to roast due to the amount of mucilage left on the bean through the Black Honey Process. So much sugar is left behind that temperature control and airflow are key in not over caramelizing the sugars present. Great care is taken to ensure the the coffee develops enough to present its best cup without the sweetness and buoyancy dissipating to bitter overspent natural sugars.

We love this find from Tanzania. This peaberry comes from estates in the Ngorngoro Crater region and the quality of the processing is evident in the truly pleasing cup. Geography plays a key role in the flavor profiles of coffee ,and this is a prime example of what makes Tanzanian Peaberries so desirable. Cirtusy sweet with a crisp body and clean finish. This bright cup is easy drinking and lively.
