So much sugar is left behind that temperature control and airflow are key in not over caramelizing the sugars present. Great care is taken to ensure the the coffee develops enough to present its best cup without the sweetness and buoyancy dissipating to bitter overspent natural sugars.

A Fair Trade Organic coffee from South America, this Colombian is great for those who like a mild but present cup. There is a good bit of complexity hiding in this cup for such a mild bodied coffee with a melon-like quality and lurking brightness that provides sweetness without a heavy mouthfeel.
